Please find attached the position statement containing guidance for the upcoming changes that affect cold holding and other associated requirements in the NC 2009 Food Code . This position statement is a culmination of the required rule change that takes place January 1st, 2019 and the work of the Cold Hold Workgroup. Many thanks to the participants of the Workgroup and the input received from various State, County, and Industry partners. Assisting documentation such as the variance application and FAQ sheet will be forthcoming.
